Grappino Chocolate

Definition
Grappino is a liqueur-filled chocolate (the liqueur is aged grappa, a characteristic product of Piedmont).
The processing method consists of preparing the filling - syrup based on water and sugar and aged grappa - at a temperature of 110°C; the filling is poured into starch molds. After cooling, the mixture creates an outer crystallization of sugar incorporating the distillate. The filling is separated from the starch and covered with chocolate; after staying for about 15 minutes at a temperature of 13-14°C, chocolates are wrapped up and labeled.

  • Production Area: Chocolates are produced in Turin, while the grappa comes from Chiaverano, in Canavese area, on the slopes of Serra di Ivrea, the morainic hill separating Eporediese from Biellese areas.

  • Legislative Protection: Grappino Chocolate is classified among the "Traditional Agri-foodstuffs of Regione Piemonte", according to art. 8 of the Legislative Decree 30th April 1998, n. 173 and the Annex to the Decisions of the Regional Council 15th April 2002 n. 46-5823.
