Saronsella Tomino (Chivassotto)

Definition
Saronsella Tomino is a fat and soft cheese with white texture, produced with whole cow's milk. It has a cylindrical and tapered shape, round flat sides with a diameter of 8-9cm, low and convex lateral side of about 2 cm, weight of 100 grams. The rind is soft, thin, and elastic, with a straw-yellow color highlighting the straw of the maturation bed. The texture is raw, cream white, slightly sinking in the mature product, the holes are small and regular. It matures for about one week. The taste and perfume of the young product recall the fragrance of milk cream. The taste of the mature product is more intense and characteristic.
The cheese has been named after Saronsella country hamlet, situated in the Municipality of San Sebastiano Da Po, where it is mainly produced in the farmsteads for the family consumption.

  • Production Area: Some Municipalities of the hills on the right of Po river, near Chivasso (TO): S. Sebastiano Da Po, Casalborgone, Rivalba, Castagneto Po. The name derives from Saronsella country hamlet of the Municipality of San Sebastiano Da Po.

  • Legislative Protection: Saronsella Tomino is classified among the "Traditional Agri-foodstuffs of Regione Piemonte", according to art. 8 of the Legislative Decree 30th April 1998, n. 173 and the Annex to the Decisions of the Regional Council 15th April 2002 n. 46-5823.
