Castellazzo Bormida Pumpkin

Pumpkins, originally coming from Central America and cultivated in Italy since the 16th century, have an old tradition in the plain of the stream Bormida and in the area of Casalcermelli, where they find suitable soils, cool and with a good drainage. They are sown in the field between April and May. The plant must be trimmed and thinned out leaving 3-4 fruits, in order to obtain uniform sizes. It is harvested in autumn, before frosts, paying attention to transport, to avoid cuts and bruises.
Pumpkins are stored in well-aired and dry premises: they can be conserved for a long time, during which they improve their organoleptic features transforming starch into sugar.
