Bicerin
Definition
Bicerin is a hot drink characteristic of Turin, served in a glass: from here the dialect term "bicerin" (meaning small glass).
The drink, whose recipe is secret, is obtained from a special mixture of cocoa, coffee, and whole milk. The selection of raw materials is the most delicate stage to obtain a fine bicerin. Bicerin is prepared at the moment, and the proportion of the ingredients can change according to the taste.
- Production Area: Bicerin is still produced in a few cafés in Turin.
- Legislative Protection: Bicerin is classified among the "Traditional Agri-foodstuffs of Regione Piemonte", according to art. 8 of the Legislative Decree 30th April 1998, n. 173 and the Annex to the Decisions of the Regional Council 15th April 2002 n. 46-5823.
