Definition
Liqueur-like Caluso Passito is obtained from Caluso passito adding alcohol, brandy, or mistelle. It is aged for at least 5 years. In this period, percentages of wines of different vintages are added, in order to improve its quality.
Liqueur-like Caluso passito has the following features:
Vine: Erbaluce. Color from golden yellow to dark amber. Limpidity: bright. Scent: ethereal, delicate, characteristic. Taste: sweet, balanced, full-bodied, velvety. Serve at 16-20°C. Minimum alcohol content: 16-17%. Minimum ageing: 5 years from the first November after the grape harvest. Match: desserts and dry pastries, spicy cheese like gorgonzola or roquefort.
- Production Area: liqueur-like Caluso passito is produced with grapes cultivated in a specific wine-growing area between Canavese, Biellese, and Vercellese. Among the Municipalities of Po Torinese Park there are Mazzè and Villareggia.
- Legislative Protection: Erbaluce di Caluso passito is a DOC wine (Controlled Designation of Origin).
