Casalborgone Tomino (Tuma)
Definition
Casalborgone tuma or tomino is a fat and soft cheese produced with raw cow's milk. The maturation period is short, 1-2 days. The color is white milk, with no rind. It is soft and wet. It has a fragrant taste recalling fresh coagulated milk with acid yogurt notes. It has a regular cylindrical shape, with flat and round sides with a diameter of 12-15 cm, lateral side 3 cm, and weight about 250-300 grams.

- Legislative Protection: Casalborgone Tomino is classified among the "Traditional Agri-foodstuffs of Regione Piemonte", according to art. 8 of the Legislative Decree 30th April 1998, n. 173 and the Annex to the Decisions of the Regional Council 15th April 2002 n. 46-5823.
