Golden Tench of Pianalto di Poirino

Definition
The tench (Tinca tinca), belonging to the family of the Cyprinidae and today strongly rarefying in Italy, has a basic yellow-green color, a darker back tending to green, lighter sides often with bronze or golden nuances, a yellowish or gray belly. The mouth is bordered red. Black spots are irregularly scattered on the back and the fins.
The Golden Tench, a variety of tench, is characterized instead by a yellow-reddish color. Such color is given to the "red lands" characterizing the plateau called "Pianalto di Poirino", consisting of Pleistocene red clays. Another feature distinguishing the golden tench from the common tench is the presence of a protrusion at the first cervical vertebrae.
The golden tench variety is bred in artificial basins and small lakes characterized by low, calm, and muddy waters, with clayey bed poor in limestone.
The golden tench of Pianalto di Poirino is known and appreciated for its lean, light, and compact meat with top-quality organoleptic features, high protein quantity, and a few bones. The Golden Tench is usually eaten fried, soused, or used to dress risotto, cooking it after drying the meat in strips of cloth for at least 24 hours.

  • Production Area: The golden tench is produced in the area called "Pianalto di Poirino". Pianalto di Poirino includes the whole territory of the following Municipalities: Poirino, Isolabella, Pralormo (in the Province of Turin), Cellarengo (in the Province of Asti), Ceresole d'Alba (in the Province of Cuneo), and part of the territory of the following Municipalities: Carmagnola, Villastellone, Santena, Riva di Chieri (in the Province of Turin), Bandissero d'Alba, Montà d'Alba, Montaldo Roero, Monteu Roero, Pocapaglia, Sanfrè, S. Stefano Roero, Sommariva del Bosco, Sommariva Perno (in the Province of Cuneo), Dusino San Michele, Valfenera, Buttigliera d'Asti, S. Paolo Solbrito, Villanova d'Asti (in the Province of Asti).
  • Legislative Protection: The Golden Tench of Pianalto di Poirino is classified among the "Traditional Agri-foodstuffs of Regione Piemonte", according to art. 8 of the Legislative Decree 30th April 1998, n. 173 and the Annex to the Decisions of the Regional Council 15th April 2002 n. 46-5823.
    The Golden Tench of Pianalto di Poirino obtained the Protected Designation of Origin (PDO) from the European Union according to the EC 510/2006 Regulation of the Council regarding the protection of geographical indications and the designations of origin of agri-foodstuffs, established with EC Rule no. 160 of 21st February 2008.
    The Golden Tench has also become one of the Slow Food Presidia in the Province of Turin.
